I have set that deleted files will be removed after one day, but I have files sitting in the thrash that I have deleted over seven days ago.
Anyone else have this issue?

You are mixing things up (I believe). You have set that completed timers get deleted after 1 day - that is the timer gets deleted from the timerlist 1 day after it is done. Files in the trash will stay there until you delete them or hard disk space runs low. You can empty the folder (in folder view when pointed at "deleted items") by pressing menu and then "permanently remove all deleted items". There is no need to worry about the trash can as the system will take care of it.

I'm afraid it's you that is mistaken.
The Trashcan code contains this (and the comment here is correct):
It also gets called when a recording stops...Code:def cleanIfIdle(self): # RecordTimer calls this when preparing a recording. That is a # nice moment to clean up.
However, there are different settings for how long to keep a finished timer (config.recording.keep_timers) and how long to leave things in trash (config.usage.movielist_trashcan_days)

…..Go to movie list, then menu/settings.
Yep, started recording and files were removed instantly.
