Probably a dumb question but here we go anyway...

I have recently purchased a Venton sat receiver which i have working perfectly now. If i cancel my current S*Y subscription is there any way that S*Y can block the signal to my dish ?

Nope, they can't stop your signal.
They will let your viewing card expire though.
