Which files keeps information about which frequencies to search in a channel search ?
And are those files editable in some way ?

I presume you are talking about satellite. The file is "satellites.xml" and yes it is editable. The image version is in etc/tuxbox this gets updated on image changes. You can download latest one from
http://satellites-xml.org/
If you want to use your own one, place the file in /etc/enigma2/

If you are searching satellites it would be satellites.xml.

What are you trying to do?
This is what the terms mean:
Polarisation 0=H 1=V
Fec inner 0= 1/2 2=2/3 3=3/4 4=5/6 5=7/8 6=8/9 8=4/5
system 0 = DVB-S 1 = DVB-S2
Modulation 1 = QPSK 2 = 8PSK

Satellites.xml does not contain a list of channels or their details. It lists satellites and transponders. If you want to scan a transponder that is not in the satellites.xml, there is no need to edit it. In the scan settings, use manual, user defined transponderand use the values you want.
Once you scan, the details will be added to the lamedb file.
Scanning a transponder and changing/adding an entry in a bouquet are two different things.
