How do I change the logo when pausing something i'm watching, currently I get the Openvix logo floating?

That is the screen saver.

Menu > Setup > System > User Interface > Settings > Show Screensaver
You can alter time and disable it too.
Just curious as to why you'd want to remove it? It's there in essence to protect your TV should you leave the picture paused and then disappear for a few days :)

(the file path is relative to /usr/share/enigma2)
So you could change the image used by putting a skin_user_<<insert-your-skin-name-here>>.xml file into /etc/enigma2 with just a modified <screen> section in it.
or if you are really bored with the logo change distro-logo.png in usr/share/enigma2 but not sure what else it would change !!
