So does a menu item with the reference to zap means how fast the channel will change?

Zap is simply a term used in the satellite industry for changing channels, as in to zap to a channel.

Zap mode

Change bouquets in quickzap

ZAP-mode allows you to set the behaviour of the screen (hold/black) during zap.
Change bouquets in QuickZap allows/denies you entering different bouquets when in QuickZap.
