I have 2x Dreambox 600 (Enigma1 based, both clones) and a Vu+ Ultimo.
I dont know anything about Vu+ Ultimo, but I'm eager to learn

Am sure you'll get to learn more about your ultimo. It's a bit of a jump from your dm600, which was an older enigma1 box. These boxes use enigma2 style operating. There are close similarities, but also big differences...

Probably the one who would know most about the jump (since he's the latest to convert over :p) would be phoenix... Having not used my dm500 box for a while, can't even remember much about e1 :p But, they are virtually one and the same, so I'm sure you'll pick it up soon enough.

All e2 boxes are very similar, with just difference in the hardware. Way they work is virtually exactly the same (vu duo, solo, uno, ultimo, et9x00, et5000 and et 6000)...
