Where can you get the latest channel lists and frequencies so that you can generate your own channel settings.

the easiest way is to load a new satellites.xml file to the box and do a full rescan. once done you can dump that with DBE= DreamboxEdit and make your own bouquet easily that way.

Don't really understand how you can extract from the site to make up the bouquet line?

you dont, that's just a reference site that lists all known channels and any changes as and when they occur, you can download a upto date satellites.xml file from there though for each satellite.

In my opinion the easiest way to create channel lists and update satellites is to use Dreamset editor (http://www.dreamset-editor.com/dreamset-about). It connects directly to King of Sat to give the very latest satellite and channel list. Much better for this reason than DreamboxEdit
Well every one has their own preferred methods. As for KOS it's user generated data and as such can be wildly inaccurate.
I didnt know KOS was user generated. Its good to know that. The reason I use Dreamset though is that its much faster - it takes minutes, whereas a Full Scan could take an hour or so, depending on the number of satellites
